This recipe is a perfect warming dinner for these cold wintery nights! Gut health is such a huge topic in the health and fitness world at the moment. The more we understand about gut health and the connection it has with our diets, the more we want to give our body what it wants! The roasted vegetables and lentils are high in dietary fibre so along with the cumin (which promotes digestion) and allspice (anti-inflammatory) this meal is perfect to keep the gut happy & healthy!
1) In a pan, add the lentils and cover with water. Add the garlic, cumin, coriander, allspice & salt and stir. Bring to boil and then cover with a lid on a low heat for 20 minutes. Keep adding water as and when needed so they don’t dry up.
2) In the meantime, chop up the veg into small chunks, onion & garlic and put on a baking try with a little hemp oil (or olive oil) and cook at 180 fan for 20-25 minutes.
3) Add a squeeze of fresh lemon to the cooked lentils and a large handful of spinach and put the lid back on until the spinach wilts.
4) Plate up the lentils, add the roasted veg and then top with some tahini.
